Semolina (Sooji) is a coarse, High-gluten flour which is made from hard durum wheat. Since semolina is high in gluten it is particularly suited to make pasta. Maa Sarada  primarily import durum wheat from Madhya Pradesh. Once the wheat reaches our mills it is de-husked and prepared to be refined.

Semolina has three larger varieties based on the size of the granule: course, medium and fine. Maa Sarada Semolina comes in course and medium granule sizes. Before the wheat is refined into flour it is lightly roasted which gives sooji its faintly brown colour.
